Dough Preparation

    In a large mixing bowl, combine the all-purpose flour and salt. Mix well to combine.

    Add the unsalted butter to the flour mixture. Using a pastry cutter or your fingers, cut the butter into the flour until the mixture resembles coarse crumbs.

    Gradually add the ice water, one tablespoon at a time, mixing until the dough comes together. Do not overmix.

    Form the dough into a ball, wrap in plastic wrap, and refrigerate for at least 30 minutes.

    In a medium saucepan over medium heat, combine the diced apples, granulated sugar, ground cinnamon, lemon juice, cornstarch, and vanilla extract.

Assembling the Empanadas
