Prepare Sushi Rice

Rinse the Rice
Begin by rinsing the sushi rice under cold water until the water runs clear. This removes excess starch and helps achieve the perfect texture.

Cook the Rice
In a medium saucepan, combine the rinsed sushi rice and 1.25 cups of water. Bring to a boil over medium heat. Once boiling, reduce to low, cover, and simmer for about 18-20 minutes or until rice is tender and water is absorbed.

In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Allow the rice to cool to room temperature.
Prepare Ahi Sashimi

Slice the Ahi Tuna
Using a sharp knife, slice the sashimi-grade Ahi tuna into thin pieces, about 1/4 inch thick. This will ensure a tender bite and beautiful presentation.

Assemble the Nigiri
Wet your hands with a little water to prevent sticking. Take a small amount of sushi rice (about 1 oz) and mold it into an oval shape. Place a slice of Ahi tuna on top of the rice and gently press to adhere.
