Prepare Sushi Rice

Rinse the Rice
Rinse the sushi rice under cold water until the water runs clear. This will remove excess starch.

Cook the Rice
Combine the rinsed rice and water in a rice cooker or pot. Cook according to the rice cooker instructions, or bring to a boil, then simmer covered for 18-20 minutes until the water is absorbed.

Season the Rice
Once cooked, transfer the rice to a large bowl. In a small saucepan, heat rice vinegar, sugar, and salt until dissolved. Pour over the rice and fold gently to mix while fanning to cool.
Prepare Ahi Poke

Cut the Ahi Tuna
Dice the sushi-grade Ahi tuna into small cubes (about ½ inch) and place in a mixing bowl.

Mix the Marinade
In the bowl with tuna, add soy sauce, sesame oil, and chopped green onions. Gently toss until the tuna is evenly coated.

Prepare Avocado
Slice the avocado in half, remove the pit, and scoop out the flesh. Cut into thin slices.
Assemble Nigiri

Form Rice Balls
Wet your hands to prevent sticking. Take a small amount of sushi rice (about 2 tablespoons) and mold it into an oval shape.

Top with Ahi Poke
Place a spoonful of the marinated Ahi poke on top of the rice ball, pressing down gently to secure.

Garnish and Serve
Place a slice of avocado on top of the poke, sprinkle with sesame seeds, and serve with nori sheets, wasabi, and pickled ginger on the side.
