Prepare Sushi Rice

Rinse the Sushi Rice
Place the sushi rice in a fine mesh strainer and rinse under cold water until the water runs clear. This removes excess starch.

Cook the Rice
In a medium saucepan, combine the rinsed sushi rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes until the rice is tender and the water is absorbed.

In a small bowl, mix together rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, remove from heat and stir in the vinegar mixture. Allow the rice to cool to room temperature.

Cut the ahi tuna into small 1/2-inch cubes. Place into a mixing bowl.

In the bowl with the tuna, add soy sauce, sesame oil, and finely chopped green onions. Gently toss to combine and let marinate for at least 10 minutes.

Lay a sheet of nori, shiny side down, on a bamboo sushi mat.

With wet hands, take a handful of sushi rice and evenly spread it over the nori, leaving a 1-inch border at the top.

Using the bamboo mat, carefully roll the sushi away from you, pressing gently but firmly to create a tight roll. Seal the edge of the nori with a little water.
