Preparing Sushi Rice

Rinse the Rice
In a fine mesh strainer, rinse the sushi rice under cold running water until the water runs clear. This removes excess starch.

Cook the Rice
In a medium saucepan, combine the rinsed sushi rice and water. Bring to a boil over medium heat. Once boiling, reduce the heat to low, cover, and simmer for 18-20 minutes or until the water is absorbed.

Season the Rice
In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Allow to cool to room temperature.

Slice the Ahi Tuna
Using a sharp knife, slice the Ahi tuna into thin sashimi-style slices.

Marinate the Tuna
In a medium bowl, combine soy sauce and sesame oil. Add the sliced tuna and gently toss to coat. Let it marinate for about 10 minutes.

Chop the green onions and set aside. Toast the sesame seeds lightly in a dry pan over medium heat until golden brown.

In a serving bowl, add a generous scoop of the prepared sushi rice as the base.
