Preparation of Ahi Belly

Marinate the Ahi Belly
In a mixing bowl, combine olive oil, soy sauce, lemon juice, minced garlic, black pepper, and salt. Whisk together until well mixed. Add the ahi belly to the marinade, ensuring it's fully coated. Cover with plastic wrap and let it marinate in the refrigerator for at least 30 minutes.

Cook the Ahi Belly
Heat a large skillet over medium-high heat. Add a little olive oil to the pan. Once hot, remove the ahi belly from the marinade (discard the marinade) and place it in the skillet. Cook for about 3-4 minutes on each side or until the fish is golden brown and cooked through. Remove from heat and let rest while preparing the sides.

Prepare the Rice
Rinse 1 cup of rice under cold water until the water runs clear. In a pot, combine the rice with 2 cups of water and a pinch of salt. Bring to a boil over high heat, then reduce to low heat, cover, and simmer for 15-20 minutes or until the rice is tender and all the water has been absorbed. Fluff with a fork before serving.

Steam the Broccoli
In a steamer basket over boiling water, add 2 cups of broccoli florets. Cover and steam for about 5-7 minutes or until bright green and tender-crisp. Season with salt and pepper to taste before serving.
