Dough

Method

Dough Preparation

  1. 1

    Activate the Yeast

In a bowl, mix warm water, sugar, and yeast. Let it sit for about 5-10 minutes until foamy.

  2. 2

    Mix the Dough

In a large mixing bowl, combine flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.

  3. 3

    Knead the Dough

Transfer the dough to a floured surface. Knead for about 8-10 minutes until smooth and elastic.

  4. 4

    Let it Rise

Place the dough in a lightly greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

Topping Preparation

  1. 5

    Cook the Sausage and Bacon

In a skillet, cook the Italian sausage over medium heat until browned. Remove and drain on paper towels. In the same skillet, cook bacon until crispy, then chop into pieces.

  2. 6

    Prepare the Mushrooms

Clean and slice the mushrooms. Sauté in the skillet with a tablespoon of olive oil until tender, about 5 minutes.

Assembling the Pizza

  1. 7

    Preheat the Oven

Preheat your wood-fired oven to about 700°F (370°C).

  2. 8

    Shape the Dough

Once the dough has risen, punch it down and divide it into two equal portions. Shape each into a pizza base using your hands or a rolling pin.

  3. 9

    Add Sauce and Toppings

Spread a thin layer of tomato sauce over each pizza base. Distribute the cooked sausage, bacon, and sautéed mushrooms evenly on top. Sprinkle with mozzarella cheese, salt, and black pepper.

Baking the Pizza

  1. 10

    Bake the Pizza

Carefully transfer the pizza to the preheated wood-fired oven. Bake for about 5-7 minutes or until the crust is golden and the cheese is bubbling.

  2. 11

    Garnish and Serve

Remove the pizza from the oven and sprinkle fresh basil on top. Let it cool for a minute before slicing and serving.
