Prepare the Pork Tenderloin
Season the pork tenderloin with salt and pepper. Heat a skillet over medium-high heat and add a little oil. Sear the pork on all sides until browned (about 5-7 minutes). Cook to an internal temperature of 145°F (63°C). Remove from heat and let rest for 5 minutes before slicing.

Make the Peanut Satay Sauce
In a saucepan, combine the peanut butter, coconut milk, soy sauce, lime juice, brown sugar, minced garlic, grated ginger, chili flakes, and sesame oil. Cook over low heat, stirring constantly, until the sauce is smooth and heated through (about 5 minutes). Adjust seasoning as needed.

Serve
Slice the pork tenderloin and arrange it on a plate. Drizzle the peanut satay sauce over the top and serve alongside the sautéed water spinach.
