Prepare Sushi Rice

Rinse Rice
In a fine mesh strainer, rinse the sushi rice under cold water until the water runs clear to remove excess starch.

Cook Rice
Combine the rinsed sushi rice and water in a rice cooker. Cook according to the rice cooker instructions. If using a pot, bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes. Remove from heat and let it steam for 10 minutes.

Season Rice
In a small saucepan, combine rice vinegar, sugar, and salt. Heat gently until sugar and salt dissolve. Pour over the warm rice and gently fold to combine. Allow to cool to room temperature.

Slice Yellowtail
Using a sharp knife, slice the yellowtail fish into thin strips, about 1/4 inch thick.

Optional Cream Cheese
If using, cut the cream cheese into thin strips.
Assemble Roll

Lay Nori
Place a bamboo sushi mat on a clean surface. Lay a nori sheet shiny side down on the mat.

Add Sushi Rice
Wet your hands to prevent sticking. Grab a handful of sushi rice and spread it evenly over the nori, leaving about 1 inch at the top edge.

Add Fillings
In the center of the rice, arrange a strip of yellowtail, avocado, cucumber, and optional cream cheese.

Roll It Up
Using the mat, carefully roll the sushi away from you, applying gentle pressure to keep it tight. Seal the edge with a little water.

Using a sharp, wet knife, slice the roll into 6-8 pieces.
