Crust Preparation

1. Combine Ingredients

In a medium bowl, mix together the graham cracker crumbs, granulated sugar, and melted butter until well combined.

2. Press into Pan

Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer.

3. Bake Crust

Preheat your oven to 350°F (175°C) and bake the crust for about 10 minutes, or until lightly golden. Remove from the oven and allow to cool slightly.

4. Blend Cream Cheese

In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy.

5. Add Sugar and Sour Cream

Gradually add 1 cup of granulated sugar and mix until well combined. Then add the sour cream and vanilla extract, mixing until smooth.

6. Incorporate Eggs

Add the eggs one at a time, mixing on low speed after each addition until just blended. Be careful not to overmix.

7. Pour Filling into Crust

Pour the cream cheese mixture into the cooled crust, spreading it evenly.

8. Bake Filling

Bake the cheesecake in the preheated oven for about 50-60 minutes, or until the center is set but slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.

If using fresh berries, wash and dry them. Sprinkle with powdered sugar for a sweet finish.

10. Serve

Once the cheesecake has cooled completely, refrigerate for at least 4 hours or overnight. Serve chilled with the prepared berries on top, if using.
