Prepare Sushi Rice

    Rinse and Cook Rice

    In a fine-mesh sieve, rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker and cook according to the manufacturer's instructions. If using a pot, bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until water is absorbed.

    Season the Rice

    Once the rice is cooked, transfer it to a large bowl. In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the rice using a wooden spoon or spatula. Allow the rice to cool to room temperature.

Assemble the Roll

    Prepare the Work Surface

    Lay a bamboo sushi mat on a clean surface and place a sheet of plastic wrap on top, leaving some overhang.

    Add Nori and Rice

    Place a nori sheet, shiny side down, on the plastic wrap. Wet your hands to prevent sticking, then take about 3/4 cup of sushi rice and spread it evenly over the nori, leaving about 1 inch at the top edge.

    Add Filling

    In the center of the rice, lay out a thin layer of cream cheese, followed by several slices of yellowtail and jalapeno.

    Roll the Sushi

    Using the bamboo mat, carefully lift the edge of the mat closest to you and begin to roll it away from you, pressing gently to form a tight roll. Roll until you reach the exposed edge of the nori. Moisten the edge with a little water to seal the roll.

    Cut the Roll

    Using a sharp knife, slice the roll into 6-8 equal pieces. Wipe the knife with a damp cloth after each cut to prevent sticking.

    Plate the Sushi

    Arrange the sushi pieces on a serving plate. Serve with soy sauce, wasabi, and pickled ginger on the side.
