Preparing the Tuna Tartare Base

Cook the Sushi Rice
Rinse 1 cup of sushi rice in cold water until the water runs clear. Cook according to package instructions, usually in a rice cooker or on the stove with 1.2 cups of water. Once cooked, let it sit covered for 10 minutes, then fluff with a fork.

Prepare the Tuna
Dice 250 grams of fresh tuna into small cubes, about ½ inch in size. Place in a mixing bowl.

Chop the Green Onions
Finely chop 2 stalks of green onions and add to the mixing bowl.

Season the Mixture
Add 2 tablespoons of soy sauce, 1 teaspoon of sesame oil, 0.5 teaspoon of salt, and 0.25 teaspoon of pepper to the bowl. Gently mix all ingredients together until combined.
Preparing the Spicy Crab Mixture

Prepare the Crab Mixture
In a separate bowl, combine 100 grams of crab meat, 1 tablespoon of Sriracha sauce, 1 tablespoon of mayonnaise, and 1 teaspoon of lemon juice. Mix well until the crab is evenly coated with the spicy mixture.
Assembling the Tuna Tartare

Layer the Ingredients
In a serving dish or bowl, start by placing a layer of sushi rice at the bottom. Then, add the tuna and avocado mixture on top, gently pressing down to form an even layer.

Add the Spicy Crab
Top the tuna and avocado layer with the spicy crab mixture, spreading it evenly over the tartare.

Garnish with Tobiko
Sprinkle 50 grams of tobiko over the top for added flavor and presentation.
