Prepare Sushi Rice

    Rinse the Rice

    Place the sushi rice in a fine mesh strainer and rinse under cold water until the water runs clear. This removes excess starch and helps the rice become sticky.

    Cook the Rice

    In a medium saucepan, combine the rinsed sushi rice and 1.5 cups of water. Bring to a boil over medium heat. Once boiling, reduce heat to low, cover, and simmer for 15-20 minutes, or until rice is tender and water is absorbed.

    Season the Rice

    Once cooked, remove the rice from heat and let it sit covered for 10 minutes. In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Fold this mixture into the warm rice, ensuring it is evenly coated. Allow the rice to cool to room temperature.

Prepare Fillings

    Mix Tuna Filling

    In a bowl, combine the drained canned tuna, mayonnaise, gluten-free soy sauce, and chopped green onion. Mix well until all ingredients are fully combined.

    Thinly slice the cucumber and avocado. Set aside for assembly.

Assemble the Rolls

    Place a nori sheet shiny side down on a bamboo sushi mat or a clean surface.

    With wet hands, take a handful of sushi rice and spread it evenly over the nori, leaving a 1-inch border at the top.

    In the center of the rice, add a line of the tuna mixture, followed by a few slices of cucumber and avocado.

    Starting from the bottom, roll the sushi tightly away from you, using the mat to help form a cylinder. Wet the top edge of the nori to seal the roll.

    Using a sharp knife, slice the roll into 6-8 pieces. Clean the knife with a damp cloth between cuts to ensure clean slices.
