Method

Prepare the Batter

    Mix Dry Ingredients

    In a mixing bowl, combine the all-purpose flour, baking powder, and a pinch of salt. Whisk together until well combined.

    Combine Wet Ingredients

    In another bowl, whisk together the dashi stock, egg, and soy sauce until smooth.

    Combine Mixtures

    Gradually pour the wet mixture into the dry ingredients, whisking until the batter is smooth and free of lumps.

Cook the Takoyaki

    Heat Takoyaki Pan

    Preheat a takoyaki pan over medium heat and lightly grease each mold with oil.

    Add Batter

    Pour the batter into each mold, filling them about 3/4 full.

    Add Fillings

    Quickly add a piece of diced octopus, some chopped green onions, tempura scraps, and pickled ginger into each mold.

    Cook and Flip

    Allow the takoyaki to cook for about 3-4 minutes until the edges start to set. Use a skewer or chopsticks to carefully flip each ball a quarter turn. Continue cooking and turning every minute until they are golden brown and crispy on the outside.

Serve the Takoyaki

    Plate and Garnish

    Once cooked, remove the takoyaki from the pan and place them on a serving plate.

    Add Toppings

    Drizzle takoyaki sauce and Japanese mayo over the top. Sprinkle bonito flakes and aonori for garnish.

    Enjoy

    Serve the takoyaki hot and enjoy while they are fresh!
