Main Ingredients

Method

Preparation

  1. 1

    Rinse the Rice

Rinse the rice under cold water in a fine mesh strainer until the water runs clear to remove excess starch. This helps prevent the rice from becoming too sticky.

  2. 2

    Soak the Rice

In a large bowl, combine the rinsed rice and water. Let it soak for about 30 minutes. This allows the rice to absorb water and helps in even cooking.

  3. 3

    Cook the Rice

After soaking, drain the rice and transfer it to a rice cooker or a pot. If using a rice cooker, use the appropriate setting for white rice. If using a pot, bring the water to a boil over medium-high heat.

  4. 4

    Steam the Rice

Once it begins to boil, reduce the heat to low, cover with a lid, and simmer for about 18-20 minutes, or until all the water is absorbed. Remove from heat and let it sit covered for 10 minutes.

Seasoning

  1. 5

    Prepare the Vinegar Mixture

In a small saucepan, combine rice vinegar, sugar, and salt. Heat gently over low heat, stirring until the sugar and salt are dissolved. Do not let it boil.

  2. 6

    Season the Rice

Transfer the cooked rice to a large bowl. While the rice is still warm, drizzle the vinegar mixture over the rice.

  3. 7

    Mix the Rice

Using a wooden spatula or rice paddle, gently fold the vinegar mixture into the rice. Be careful not to mash the rice; use a slicing motion to mix. This helps to keep the grains intact.

  4. 8

    Cool the Rice

Let the seasoned rice cool to room temperature before using it for sushi or other dishes.
