Prepare Sushi Rice

    Rinse the Rice

    Rinse the sushi rice under cold water until the water runs clear to remove excess starch.

    Cook the Rice

    In a rice cooker or pot, combine the rinsed sushi rice and water. Cook according to rice cooker instructions or bring to a boil, then reduce heat and simmer for 18-20 minutes until water is absorbed.

    Season the Rice

    Once cooked, transfer the rice to a large bowl. In a separate bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the rice while fanning it to cool.

Prepare the Filling

    Mix the Filling

    In a bowl, combine the imitation crab meat, Sriracha sauce, and mayonnaise. Mix well until the crab is evenly coated.

    Prepare the Vegetables

    Slice the avocado in half, remove the pit, and scoop the flesh out. Cut it into thin strips. Cut the cucumber in half lengthwise and then slice it into thin strips.

Assemble the Rolls

    Lay Out the Nori

    Place a bamboo sushi mat on a flat surface. Lay a nori sheet shiny side down on the mat.

    Spread the Rice

    Wet your hands to prevent sticking. Take about 3/4 cup of sushi rice and spread it evenly over the nori, leaving a 1-inch border at the top.

    Add the Filling

    Place a line of the crab mixture, avocado, and cucumber along the bottom edge of the rice-covered nori.

    Roll the Sushi

    Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to form a tight roll. Seal the edge with a little water.

    Slice the Roll

    Using a sharp knife, slice the roll into 6-8 pieces. Wipe the knife with a damp cloth between cuts for clean slices.

    Garnish and Serve

    Sprinkle sesame seeds on top of the rolls and serve with soy sauce on the side.
