Prepare Sushi Rice

Rinse and Cook Rice
Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker. Cook according to the rice cooker's instructions or simmer on the stovetop for about 20 minutes until the rice is tender.

Season Rice
Once the rice is cooked, transfer it to a large bowl. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the warm rice. Let it cool to room temperature.

Mix Filling
In a medium bowl, combine the imitation crab meat (shredded), mayonnaise, Sriracha, and chopped green onions. Mix well until everything is evenly coated.

Lay Nori on Bamboo Mat
Place a sheet of nori on a bamboo sushi mat, shiny side down.

Spread Rice
Wet your hands to prevent sticking, then take a handful of sushi rice and spread it evenly over the nori, leaving about 1 inch at the top edge.

Roll Sushi
Using the bamboo mat, carefully lift the edge of the mat and start rolling the sushi away from you, tucking in the filling tightly. Roll until you reach the bare edge of the nori. Use a bit of water to seal the edge.

Slice Rolls
Using a sharp knife, cut the roll into 8 equal pieces. Wipe the knife with a damp cloth between cuts for clean slices.
Serve

Plate and Garnish
Arrange the sushi on a plate. Sprinkle sesame seeds over the top and serve with soy sauce and pickled ginger on the side.
