Filling Preparation

Prepare the Filling
In a bowl, combine the crab meat, cream cheese, finely chopped jalapeño, salt, and black pepper. Mix well until all ingredients are fully incorporated. Set aside.

Make the Batter
In a mixing bowl, whisk together the all-purpose flour, cornstarch, baking powder, and salt. Gradually add ice cold water while whisking until a smooth batter forms. Ensure there are no lumps. Set aside.
Frying

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches about 350°F (175°C).

Batter the Filling
Using a spoon, scoop a portion of the crab filling and dip it into the batter, ensuring it is fully coated.

Fry the Crab Bites
Carefully drop the battered crab filling into the hot oil. Fry in batches, making sure not to overcrowd the pan, until golden brown and crispy, about 3-4 minutes. Remove with a slotted spoon and drain on paper towels.

In a small bowl, mix the mayonnaise and Sriracha sauce together until well blended. Adjust the spice level according to your preference.

Arrange the fried crab bites on a serving platter. Drizzle with spicy mayo and eel sauce. Garnish with sliced green onions before serving.
