Prepare Sushi Rice

    Rinse the Rice

    Place the sushi rice in a fine-mesh sieve and rinse under cold water until the water runs clear. This removes excess starch.

    Cook the Rice

    In a medium saucepan, combine the rinsed sushi rice and 1.5 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until water is absorbed.

    Season the Rice

    Once cooked, transfer the rice to a large bowl. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Pour over warm rice and gently fold to combine. Allow to cool.

Prepare Fillings

    Slice the Salmon

    Using a sharp knife, slice the fresh salmon fillet into thin strips, approximately 1/4 inch wide.

    Prepare the Avocado

    Cut the avocado in half, remove the pit, and scoop out the flesh. Slice the flesh into thin strips.

    Slice the Cucumber

    Wash the cucumber and cut it into thin strips or julienne.

Assemble the Rolls

    Lay Out the Nori

    Place a sheet of nori on a bamboo sushi mat, shiny side down.

    Wet your hands to prevent sticking. Take a handful of sushi rice and evenly spread it over the nori, leaving about 1 inch at the top edge.

    Add the Fillings

    Lay strips of salmon, avocado, and cucumber horizontally across the center of the rice.

    Roll the Sushi

    Using the bamboo mat, carefully roll the nori away from you, pressing gently but firmly to create a tight roll. Seal the edge of the nori with a little water.

    Slice the Roll

    Using a sharp knife, slice the roll into bite-sized pieces. Clean the knife with a damp cloth between cuts.
