Prepare Sushi Rice

Rinse the Rice
Place the sushi rice in a fine-mesh sieve and rinse under cold water until the water runs clear. This removes excess starch.

Cook the Rice
In a medium saucepan, combine the rinsed sushi rice and 1.5 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until water is absorbed.

Once cooked, transfer the rice to a large bowl. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Pour over warm rice and gently fold to combine. Allow to cool.

Slice the Salmon
Using a sharp knife, slice the fresh salmon fillet into thin strips, approximately 1/4 inch wide.

Cut the avocado in half, remove the pit, and scoop out the flesh. Slice the flesh into thin strips.

Place a sheet of nori on a bamboo sushi mat, shiny side down.
