Prepare Noodles

Cook the Noodles
In a large pot, bring water to a boil. Add the Lo Mein noodles and cook according to package instructions until al dente, usually about 5-7 minutes. Once cooked, drain and rinse under cold water to stop the cooking process. Set aside.
Make the Sauce

Combine Sauce Ingredients
In a small bowl, whisk together the soy sauce, sesame oil, minced garlic, grated ginger, sugar, and black pepper until well combined. Set aside.
Cook Vegetables (if using)

Sauté Vegetables
If adding vegetables, finely chop the green onions, bell pepper, and carrots. In a pan over medium heat, add a tablespoon of oil. Once hot, add the chopped vegetables and sauté for about 3-4 minutes until they are tender but still crisp.
Combine Everything

Mix Noodles and Sauce
In the pan with the sautéed vegetables (or a separate large bowl if not using vegetables), add the drained Lo Mein noodles. Pour the sauce over the noodles and toss everything together until the noodles are evenly coated in the sauce. Cook for an additional 2-3 minutes over low heat to warm everything through.
Serve

Transfer the Lo Mein to serving plates, garnish with additional green onions if desired, and serve warm. Enjoy your plain Lo Mein!
