Method

Prepare Sushi Rice

    Rinse the Rice

    Rinse the sushi rice under cold water in a fine-mesh strainer until the water runs clear. This removes excess starch.

    Cook the Rice

    In a rice cooker or pot, combine the rinsed sushi rice and 2.5 cups of water. Cook according to the rice cooker's instructions or bring to a boil, then reduce heat and simmer for 20 minutes. Remove from heat and let it sit covered for 10 minutes.

    Season the Rice

    In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice while fanning it to cool down and give it a shiny appearance.

Prepare Oshinko Filling

    Prepare the Vegetables

    Julienne the carrot and cucumber into thin strips. Cut the pickled daikon radish into thin strips as well.

Assemble the Rolls

    Lay Out Nori

    Place a bamboo sushi mat on a clean surface. Lay a sheet of nori shiny side down on the mat.

    Add Rice

    With wet hands, spread about 3/4 cup of sushi rice evenly over the nori, leaving about 1 inch at the top.

    Add Filling

    Place a few strips of oshinko, carrot, and cucumber horizontally across the rice in the center.

    Roll the Sushi

    Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to keep it tight. Seal the edge with a little water.

    Slice the Roll

    Using a sharp knife, slice the roll into bite-sized pieces. Wipe the knife with a damp cloth between cuts for clean slices.

    Serve

    Sprinkle the cut rolls with toasted sesame seeds and serve with soy sauce on the side.
