Method
Preparing the Chicken

Cut and Marinate the Chicken
Cut the chicken breasts into bite-sized pieces and season with salt and black pepper. Let it marinate for about 15 minutes.

Make the Batter
In a medium bowl, whisk together the flour, cornstarch, egg, water, salt, and black pepper until smooth.
Frying the Chicken

Heat the Oil
In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until hot.

Fry the Chicken
Dip each piece of marinated chicken in the batter and carefully place it in the hot oil. Fry until golden brown and cooked through, about 5-7 minutes. Remove and drain on paper towels.
Making the Orange Glaze

Combine Glaze Ingredients
In a saucepan over medium heat, combine the orange juice, soy sauce, sugar, rice vinegar, garlic, ginger, and red pepper flakes. Stir well.

Thicken the Sauce
In a small bowl, mix the cornstarch with water to create a slurry. Once the sauce is simmering, add the slurry and stir until the sauce thickens, about 2-3 minutes.
Assembling the Dish

Combine Chicken and Sauce
Add the fried chicken pieces to the saucepan with the orange glaze and toss to coat evenly.

Serve the orange chicken over steamed rice or fried rice, with a side of mixed vegetables.
