Method

Preparation

  1. 1

    Clean the Octopus

Rinse the fresh octopus under cold running water. Remove the beak from the center of the tentacles and discard the ink sac if present. Pat the octopus dry with paper towels.

  2. 2

    Tenderizing the Octopus

To tenderize the octopus, you can freeze it overnight or use a meat mallet to gently pound it. This helps to break down the fibers.

Cooking

  1. 3

    Boil the Octopus

Fill a large pot with water and add 1 tablespoon of salt. Bring the water to a boil. Add the octopus and simmer for about 30-40 minutes, or until tender. Once cooked, remove the octopus and let it cool slightly.

  2. 4

    Prepare the Marinade

In a bowl, mix together the olive oil, minced garlic, the juice of the lemon, chopped parsley, black pepper, and remaining salt.

  3. 5

    Grill the Octopus

Once cooled, cut the octopus into serving pieces. Preheat a grill to medium-high heat. Brush the octopus pieces with the marinade and grill for about 3-4 minutes on each side, until charred and crispy.

Serving

  1. 6

    Plate the Dish

Arrange the grilled octopus on a serving platter. Drizzle with extra virgin olive oil and garnish with lemon wedges and additional chopped parsley if desired.
