Method

Prepare Ice Cream Balls

    Scoop Ice Cream

    Using an ice cream scoop, portion out the ice cream into small balls, about 1-2 tablespoons each. Place them on a lined baking sheet.

    Freeze Ice Cream Balls

    Place the baking sheet in the freezer and allow the ice cream balls to freeze for at least 1-2 hours, or until they are solid.

Make Mochi Dough

    Mix Ingredients

    In a microwave-safe bowl, combine the sweet rice flour and granulated sugar. Gradually add water while stirring until the mixture is smooth and well combined.

    Microwave the Mixture

    Cover the bowl with plastic wrap and microwave on high for 1 minute. Stir the mixture, then cover again and microwave for another 1 minute. Repeat this process until the dough is slightly translucent, about 3-4 minutes total.

    Cool the Dough

    Once cooked, let the mochi dough cool for about 10-15 minutes until it is manageable to handle.

    Prepare Cornstarch

    On a clean surface, sprinkle a generous amount of cornstarch to prevent the dough from sticking.

Assemble Mochi Ice Cream

    Shape Mochi

    Once the dough is cool, take a small piece (about 2 tablespoons) and flatten it into a circle using your hands or a rolling pin.

    Wrap Ice Cream Balls

    Place a frozen ice cream ball in the center of the flattened mochi dough. Carefully fold the edges of the dough over the ice cream and pinch to seal. Make sure the ice cream is fully encased.

    Repeat the process with the remaining dough and ice cream balls. If the dough becomes too sticky, dust with more cornstarch.

Final Touch

    Coat with Toppings

    If desired, roll the finished mochi ice cream in sweetened coconut flakes or dust with matcha powder for added flavor and presentation.

    Place the assembled mochi ice cream back in the freezer for at least 30 minutes before serving to ensure they hold their shape.
