Cook the Udon Noodles
Bring a pot of water to a boil. Add the udon noodles and cook according to package instructions, usually 8-10 minutes, or until tender. Drain and rinse under cold water to stop cooking. Set aside.

Prepare the Tofu
While the noodles are cooking, cube the firm tofu and set aside. If using, you can press the tofu to remove excess moisture for better frying.

Fry the Tofu
In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium heat. Add the cubed tofu and fry for about 5-7 minutes, turning occasionally until golden and crispy. Remove from skillet and set aside.

Stir-Fry the Vegetables
In the same skillet, add the remaining tablespoon of vegetable oil. Add minced garlic and fry for 30 seconds until fragrant. Add the sliced bell pepper, julienned carrot, and sliced mushrooms. Stir-fry for about 5 minutes until they are tender.

Combine Ingredients
Add the cooked udon noodles and fried tofu back to the skillet with the vegetables. In a small bowl, mix soy sauce, sesame oil, oyster sauce, chili paste, and sugar. Pour the sauce over the noodles and toss everything together. Cook for an additional 2-3 minutes to heat through and allow the flavors to meld.

Remove from heat and transfer to a serving dish. Garnish with sesame seeds and chopped cilantro. Serve hot.
