Preparing the Sweet Potatoes

Peel and Cut Sweet Potatoes
Peel the sweet potatoes and cut them into thin fries or cubes, about 1/4 inch thick.

Soak Sweet Potatoes
Place the cut sweet potatoes in a bowl of cold water and soak for at least 30 minutes to remove excess starch.

Drain and Dry
Drain the sweet potatoes from the water and pat them dry with paper towels to remove excess moisture.
Frying the Sweet Potatoes

Heat Oil
In a large frying pan or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry Sweet Potatoes
Carefully add the sweet potatoes to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 3-5 minutes or until they are golden brown and crispy.

Drain and Season
Using a slotted spoon, remove the fried sweet potatoes and place them on a paper towel-lined plate to drain excess oil. While still hot, sprinkle with salt and black pepper to taste.
Preparing the Cream Cheese Topping

Mix Cream Cheese
In a mixing bowl, combine the cream cheese and sour cream. Blend until smooth and creamy.

Add Seasoning
Stir in the chopped chives and garlic powder into the cream cheese mixture until well combined.
Serving

Plate and Serve
Serve the fried sweet potatoes hot with a generous dollop of cream cheese topping on the side or drizzled over the top.
