Roll Assembly
Method
Prepare Sushi Rice
- 1
Rinse the Rice
In a fine mesh sieve, rinse the sushi rice under cold water until the water runs clear to remove excess starch.
- 2
Cook the Rice
In a medium saucepan, combine the rinsed sushi rice and 1.5 cups of water. Bring to a boil, then cover and reduce heat to low. Cook for about 20 minutes, or until the rice is tender and the water is absorbed.
- 3
Season the Rice
Once cooked, remove the rice from heat and let it cool slightly. In a small bowl, mix together rice vinegar, sugar, and salt. Pour this mixture over the warm rice and gently fold to combine without mashing the rice. Let cool to room temperature.
Prepare Spicy Tuna Filling
- 4
Prepare the Tuna
Finely chop the sushi-grade tuna into small pieces and place it in a mixing bowl.
- 5
Mix the Filling
Add mayonnaise, Sriracha sauce, chopped green onions, and sesame oil to the chopped tuna. Mix until well combined. Adjust seasoning if necessary.
Assemble the Rolls
- 6
Prepare the Nori
Lay a sheet of nori, shiny side down, on a bamboo sushi mat or a clean cutting board.
- 7
Spread the Rice
With wet hands, grab a handful of sushi rice and spread it evenly over the nori, leaving about 1 inch at the top edge.
- 8
- 9
Roll the Sushi
Using the bamboo sushi mat, roll the sushi tightly away from you, applying gentle pressure to form a tight roll. Seal the edge with a little water.
- 10
Slice the Rolls
Using a sharp knife, slice the roll into 6-8 pieces, cleaning the knife with a damp cloth between cuts to ensure clean slices.
- 11
Garnish and Serve
Sprinkle tempura flakes on top of the sliced rolls. Serve with soy sauce and wasabi on the side.
