Method
Preparing Sushi Rice
- 1
Rinse the Rice
Rinse the sushi rice under cold water until the water runs clear. This helps to remove excess starch.
- 2
Cook the Rice
In a pot, combine the rinsed sushi rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes or until rice is tender and water is absorbed. Remove from heat and let it sit covered for 10 minutes.
- 3
Season the Rice
In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice, being careful not to mash the grains. Allow the rice to cool to room temperature.
Preparing Spicy Salmon Filling
- 4
Prepare Salmon
Finely chop the fresh salmon fillet into small cubes.
- 5
Mix Filling
In a bowl, combine chopped salmon, sriracha sauce, mayonnaise, green onions, and sesame oil. Mix well to combine.
Assembling the Rolls
- 6
Lay Out Nori
Place a sheet of nori on a bamboo sushi mat or a clean surface, shiny side down.
- 7
Spread Sushi Rice
Wet your hands with water to prevent sticking, then grab a handful of sushi rice and evenly spread it over the nori, leaving a small border at the edges.
- 8
Add Filling
Place a line of the spicy salmon filling across the center of the rice.
- 9
Roll the Sushi
Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to keep the roll tight.
- 10
Seal the Roll
Moisten the edge of the nori with a little water to help seal the roll.
Preparing Crunchy Topping
- 11
Toast Panko
In a small skillet, heat vegetable oil over medium heat. Add panko breadcrumbs and toast until golden brown, stirring frequently.
- 12
Add to Rolls
Once toasted, remove panko from heat and let it cool slightly. Roll the sushi rolls in the toasted panko to coat the outside.
Serving
- 13
Slice the Rolls
Using a sharp knife, slice the rolls into bite-sized pieces, wiping the knife with a damp cloth between cuts.
- 14
Plate and Serve
Serve the sushi rolls on a plate with soy sauce, pickled ginger, and wasabi on the side.
