Method

Prepare Sushi Rice

    Rinse the Rice

    Place sushi rice in a fine mesh strainer and rinse under cold water until the water runs clear. This removes excess starch.

    Cook the Rice

    In a medium saucepan, combine rinsed sushi rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes or until water is absorbed. Remove from heat and let it sit covered for 10 minutes.

    Season the Rice

    In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Transfer the rice to a large bowl and gently fold in the vinegar mixture using a wooden spatula. Allow the rice to cool to room temperature.

Prepare Fillings

    Prepare Crab

    If using imitation crab meat, shred it into bite-sized pieces and set aside.

    Slice Avocado

    Cut avocado in half, remove the pit, and scoop the flesh out. Slice into thin strips.

    Slice Cucumber

    Peel the cucumber if desired, then slice it into thin strips or matchsticks.

Assemble Sushi Rolls

    Lay Nori

    Place a sheet of nori on a bamboo sushi mat, shiny side down.

    Spread Rice

    Wet your hands to prevent sticking. Take a handful of sushi rice and spread it evenly over the nori, leaving a 1-inch border at the top.

    Add Fillings

    In the center of the rice, place a few pieces of crab, followed by a layer of avocado and cucumber.

    Roll the Sushi

    Lift the edge of the mat closest to you and begin rolling the sushi away from you, applying gentle pressure. Roll until the filling is enclosed, then use the mat to shape the roll.

    Cut the Roll

    Using a sharp, wet knife, slice the roll into 6-8 pieces. Clean the knife between cuts for clean edges.

    Serve

    Sprinkle sesame seeds on top of the rolls. Serve with soy sauce, wasabi, and pickled ginger on the side.
