Prepare the Coating
Once marinated, remove the chicken from the marinade and let excess liquid drip off. Dredge each piece in cornstarch, ensuring they are fully coated.

Heat the Oil
In a deep frying pan or pot, heat vegetable oil over medium-high heat until it reaches 180°C (350°F).

Fry the Chicken
Carefully add the coated chicken pieces to the hot oil, frying in batches if necessary to avoid overcrowding. Fry for about 5-7 minutes until golden brown and cooked through. Use a slotted spoon to remove the chicken and drain on paper towels.

Prepare the Salad
In a large bowl, combine the shredded cabbage and julienned carrot.

Dress the Salad
In a separate bowl, whisk together sesame oil, rice vinegar, and salt. Pour the dressing over the cabbage and carrot, and toss to combine.

Assemble the Buns
On each lettuce leaf, place a piece of fried chicken, followed by a spoonful of the cabbage salad and a drizzle of gochujang sauce. Wrap the lettuce around the filling and enjoy!
