Prepare Sushi Rice

Rinse the Rice
In a fine mesh strainer, rinse the sushi rice under cold water until the water runs clear to remove excess starch.

Cook the Rice
In a medium saucepan, combine rinsed sushi rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit, covered, for an additional 10 minutes.

Season the Rice
In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Transfer cooked rice to a large bowl and gently fold in the vinegar mixture. Allow to cool to room temperature.

Lay Out Nori
Place a nori sheet, shiny side down, on a bamboo sushi mat.

Spread Rice
Wet your hands to prevent sticking and take a handful of sushi rice. Spread it evenly over the nori, leaving about 1 inch at the top edge.

Add Fillings
In the center of the rice, layer the cooked shrimp, cucumber strips, and a leaf of lettuce. Drizzle with Japanese mayonnaise.

Roll the Sushi
Using the bamboo mat, carefully lift the edge of the mat closest to you and start rolling the sushi away from you, pressing gently to form a tight roll. Continue rolling until the nori is sealed.

Slice the Roll
Using a sharp, wet knife, slice the roll into 6 to 8 pieces. Wipe the knife between cuts for clean edges.
