Method

Prepare Sushi Rice

    Rinse the Rice

    Place the sushi rice in a fine-mesh sieve and rinse under cold water until the water runs clear to remove excess starch.

    Cook the Rice

    In a medium saucepan, combine the rinsed rice and water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 20 minutes, or until the rice is tender and the water is absorbed.

    Season the Rice

    Once the rice is cooked, transfer it to a bowl. In a separate small bowl, mix together the rice vinegar, sugar, and salt until dissolved. Pour this mixture over the hot rice and gently fold it in, being careful not to mash the grains. Allow the rice to cool to room temperature.

Prepare Tuna Filling

    Prepare the Tuna

    Dice the sushi-grade tuna into small cubes (about 1/2 inch).

    Mix the Seasoning

    In a bowl, combine the diced tuna with black pepper, soy sauce, and sesame oil. Mix gently and set aside to marinate for about 10 minutes.

Assemble the Rolls

    Prepare Vegetables

    Cut the avocado in half, remove the pit, and slice it into thin strips. Cut the cucumber into thin strips as well.

    Roll the Sushi

    Place a bamboo sushi mat on a flat surface and lay one nori sheet shiny side down. Wet your hands with water to prevent sticking, then take about 1/4 of the sushi rice and spread it evenly over the nori, leaving about an inch at the top edge.

    Add Filling

    Place a line of marinated tuna, avocado strips, and cucumber strips across the center of the rice-covered nori.

    Roll it Up

    Using the bamboo mat, carefully lift the edge of the mat closest to you and start rolling it away from you, tucking the filling in as you go. Roll tightly but not too tight, to avoid squeezing out the filling. Seal the edge of the nori with a little water.

    Slice the Roll

    Using a sharp knife, slice the roll into 6-8 pieces, wiping the knife with a damp cloth between cuts to ensure clean slices.

    Serve

    Place the sliced rolls on a plate and serve with pickled ginger and wasabi on the side.
