Preparing Sushi Rice

    Rinse and Cook the Rice

    Rinse 1 cup of sushi rice under cold water until the water runs clear. Combine the rinsed rice and 1.5 cups of water in a rice cooker and cook according to the manufacturer's instructions. Alternatively, you can cook it in a pot on the stove.

    Mix Seasoning

    Once the rice is cooked, transfer it to a large bowl. In a small bowl, mix 2 tablespoons of rice vinegar, 1 teaspoon of sugar, and 1 teaspoon of salt until dissolved. Pour this mixture over the hot rice and gently fold it in to combine. Allow the rice to cool to room temperature.

Preparing Avocado Filling

    Mash the Avocados

    Cut 2 ripe avocados in half, remove the pit, and scoop the flesh into a bowl. Mash the avocados with a fork until smooth. Add 1 tablespoon of lemon juice and salt to taste, mixing well.

Assembling the Rolls

    Prepare Nori and Cucumber

    Lay a bamboo sushi mat on a flat surface. Place a nori sheet, shiny side down, on the mat. Cut 1 cucumber into thin strips.

    Add Rice and Filling

    Wet your hands with water to prevent sticking. Take a handful of sushi rice and spread it evenly over the nori, leaving about 1 inch at the top. Spread a line of the avocado filling across the center and top with a few cucumber strips.

    Roll the Sushi

    Using the bamboo mat, lift the edge closest to you and start rolling away from you while applying gentle pressure. Roll until the nori edge seals the roll, using a little water to moisten it if necessary.

    Cut and Serve

    Using a sharp knife, slice the roll into 6 to 8 pieces. Sprinkle sesame seeds on top if desired. Repeat the process with the remaining ingredients.
