Prepare the Filling
In a mixing bowl, mash the ripe avocados with a fork until smooth but still chunky.

Fill the Wontons
Take a wonton wrapper and place about 2 tablespoons of the avocado mixture in the center. Moisten the edges of the wrapper with water, fold over to create a triangle, and press to seal. Repeat with remaining wrappers and filling.

Heat the Oil
In a deep skillet or frying pan, heat the olive oil over medium heat until hot.

Fry the Egg Rolls
Carefully add the filled wontons to the hot oil, a few at a time, and fry until golden brown and crispy, about 2-3 minutes on each side. Remove and drain on paper towels.
For the Peanut Sauce

Combine Ingredients
In a small bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey, minced garlic, and water until smooth. Adjust the consistency with more water if needed.

Transfer the peanut sauce to a serving bowl and enjoy it alongside the crispy avocado egg rolls.
