1. Sauté the Base
In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
2. Cook the Mushrooms
Add the assorted mushrooms to the pot. Sauté for about 5-7 minutes until the mushrooms are tender and have released their moisture.
3. Add Broth and Seasoning
Pour in the vegetable broth and water. Add the fresh thyme, salt, and pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes.
4. Blend the Soup
Using an immersion blender, carefully blend the soup until smooth. If you prefer a chunkier texture, blend only half of the soup.
5. Finish with Truffle Oil
Stir in the truffle oil and adjust the seasoning if needed. Simmer for an additional 5 minutes to combine the flavors.
6. Serve
