Kabobs Preparation

Marinate the Beef

In a bowl, combine harissa paste, olive oil, minced garlic, salt, and black pepper. Add cubed beef and marinate for at least 30 minutes.

Assemble Kabobs

Thread marinated beef, bell peppers, and red onion onto skewers.

Couscous and Tabbouleh

Prepare Couscous

Cook couscous according to package instructions. Fluff with a fork and let cool.

Mix Tabbouleh

In a bowl, combine cooled couscous, chickpeas, parsley, mint, lemon juice, olive oil, salt, and pepper. Toss well.

Grilling

Grill Kabobs

Preheat the grill to medium-high. Grill kabobs for about 10-12 minutes, turning occasionally, until beef is cooked to desired doneness.

Toss zucchini and cherry tomatoes with olive oil, salt, and pepper. Grill for 5-7 minutes, until tender and slightly charred.

In a bowl, mix cilantro, parsley, garlic, cumin, paprika, lemon juice, olive oil, and salt.

Whisk together tahini, lemon juice, water, minced garlic, and salt until smooth.
