Method

Steak Preparation

Season the Steak

Generously season the coulotte steak with salt and pepper on both sides.

Sear the Steak

In a hot grill or skillet, add olive oil and sear the steak for about 4-5 minutes on each side for medium-rare.

Rest the Steak

Remove the steak from heat and let it rest for 5 minutes before slicing.

Broccolini Preparation

Prepare the Broccolini

In a pan, heat olive oil and sauté minced garlic until fragrant.

Cook the Broccolini

Add broccolini to the pan, season with salt, and cook for about 5-7 minutes until tender.

Green Peppercorn Jus Preparation

Make the Jus

In a small saucepan, combine beef stock and green peppercorns. Bring to a simmer.

Finish the Jus

Whisk in butter and season with salt to taste. Allow to reduce slightly.

Fries Preparation

Prepare the Potatoes

Cut Yukon Gold potatoes into fries and soak in water for 30 minutes, then drain and pat dry.

Fry the Potatoes

Coat the fries in olive oil, season with salt, and bake in a preheated oven at 425°F (220°C) for 25-30 minutes until golden and crispy.

Serving

Plate the Dish

Slice the rested coulotte steak and serve alongside the sautéed broccolini and Yukon Gold fries. Drizzle with green peppercorn jus.
