Make the Crust
In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar. Stir until the mixture resembles wet sand.

Press the Crust
Press the mixture evenly into the bottom of a 9-inch springform pan. Bake at 350°F (175°C) for 8-10 minutes, then allow to cool.

Melt the Chocolate
In a microwave-safe bowl, melt the chopped white chocolate in 30-second intervals, stirring between each, until smooth. Let it cool slightly.

Mix the Filling
In a large mixing bowl, combine the softened cream cheese and sugar. Beat with an electric mixer until smooth. Add the melted white chocolate and vanilla extract, mixing until fully incorporated.

Add Eggs and Cream
Add the eggs one at a time, mixing well after each addition. Finally, mix in the heavy cream until just combined.

Bake the Cheesecake
Pour the cheesecake filling over the cooled crust. Bake at 325°F (160°C) for 55-65 minutes or until the center is set but slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.

Chill and Serve
Refrigerate the cheesecake for at least 4 hours or overnight before serving. Remove the sides of the springform pan and slice to serve.
