Preparation
- 1
Soak the Rice
Rinse the glutinous rice under cold water until the water runs clear. Soak the rice in water for at least 4 hours or overnight.
- 2
Cook the Rice
Drain the soaked rice and steam it in a bamboo or metal steamer lined with cheesecloth for 20-25 minutes until tender.
- 3
Prepare the Coconut Sauce
In a saucepan, combine the coconut milk, sugar, and salt. Heat over medium heat until the sugar dissolves. Do not boil.
- 4
Combine Rice and Sauce
Once the rice is cooked, transfer it to a bowl and pour half of the coconut sauce over the rice. Mix gently and let it sit for 15-20 minutes to absorb the flavors.
Serving
- 5
Plate the Pudding
Spoon the sticky rice pudding onto serving plates or bowls. Top with sliced mango, toasted sesame seeds, and fresh mint leaves.
- 6
Drizzle with Sauce
Drizzle the remaining coconut sauce over the top of each serving for added flavor.
