    Marinate the Tuna

    In a bowl, whisk together sumac, olive oil, minced garlic, lemon juice, salt, and black pepper. Add the albacore tuna steaks and coat them well. Cover and refrigerate for at least 30 minutes.

Buttermilk Dressing

    Prepare Buttermilk Dressing

    In a small bowl, mix together buttermilk, mayonnaise, Dijon mustard, chopped dill, salt, and black pepper until smooth. Set aside.

Olive Tapenade

    Make Olive Tapenade

    In a food processor, combine Kalamata olives, capers, chopped garlic, olive oil, and lemon juice. Pulse until the mixture is chunky but well combined. Set aside.

Cooking

    Cook the Tuna

    Preheat a grill or grill pan over medium-high heat. Remove the tuna from the marinade and grill for about 3-4 minutes on each side for medium-rare, or longer if desired.

    Serve

    Plate the grilled tuna and top with olive tapenade. Drizzle with buttermilk dressing and add white anchovies on the side.
