    Prepare the Ingredients

    Chop the onion, bell pepper, celery, and garlic. Slice the andouille sausage into rounds.

    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the chopped onion, bell pepper, and celery. Sauté for about 5 minutes until the vegetables become soft.

    Cook the Sausage

    Add the sliced andouille sausage to the pot and cook for an additional 5 minutes until the sausage is browned.

    Add Garlic and Spices

    Stir in the minced garlic and Cajun spice, cooking for 1-2 minutes until fragrant.

    Add Rice and Broth

    Add the Carnaroli rice, stirring to coat it with the mixture. Pour in the chicken broth and bring to a boil.

    Simmer

    Reduce the heat to low, cover the pot, and simmer for about 20 minutes or until the rice is tender and has absorbed the liquid.

    Add Shrimp

    During the last 5 minutes of cooking, add the Argentine shrimp to the pot and stir to combine. Cook until the shrimp are pink and opaque.

    Season and Serve

    Season with salt and black pepper to taste. Serve the jambalaya with braised collard greens on the side, garnished with chopped green onions.
