    Preheat the oven to 200°C (400°F).

    Boil the marble potatoes in salted water until tender, about 15 minutes. Drain and set aside.

    Trim the asparagus and blanch in boiling water for 2-3 minutes until bright green, then immediately transfer to an ice bath. Drain and set aside.

    In a blender, combine the sea buckthorn berries, buttermilk, lemon juice, and honey. Blend until smooth to create the emulsion. Adjust seasoning with salt and pepper if necessary.

Cooking

    Sear the Arctic Char

    Rub the Arctic Char fillets with olive oil, salt, and black pepper. Heat a skillet over medium-high heat and sear the fillets for 4-5 minutes on each side until cooked through and skin is crispy.

    Char the Baby Gem Lettuce

    Cut the baby gem lettuce in half lengthwise. In the same skillet, add a little more olive oil and place the cut side of the lettuce down. Sear for 1-2 minutes until slightly charred.

Plating

    On a plate, arrange the boiled marble potatoes, blanched asparagus, and charred baby gem lettuce. Place the seared Arctic Char on top and drizzle with the sea buckthorn emulsion.
