Method

Soup Preparation

    Roast Yams

    Preheat the oven to 400°F (200°C). Peel and dice yams into cubes. Toss with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until tender.

    Sauté Aromatics

    In a large pot, heat some olive oil over medium heat. Add diced onion and minced garlic, and sauté until translucent.

    Combine and Blend

    Add the roasted yams to the pot along with vegetable broth. Simmer for 10 minutes. Use an immersion blender or transfer to a blender to puree until smooth.

Smoked Chili Crema Preparation

    Mix Ingredients

    In a small bowl, combine sour cream, smoked paprika, lime juice, chili powder, and salt. Mix well and set aside.

Plantain Crisps Preparation

    Prepare Plantains

    Peel green plantains and slice them thinly (about 1/8 inch thick).

    Fry Plantains

    Heat vegetable oil in a deep pan over medium-high heat. Fry the plantain slices in batches until golden and crispy. Remove and drain on paper towels, and season with salt.

Serving

    Assemble the Dish

    Serve the roasted yam soup hot, drizzled with smoked chili crema, and garnish with crispy plantain chips on top.
