Pork Terrine Preparation

    Prepare the Mixture

    In a large mixing bowl, combine the ground pork, pork fatback, minced shallots, minced garlic, fresh thyme, salt, and black pepper. Mix well until all ingredients are evenly combined.

    Add Brandy and Gelatin

    In a small bowl, dissolve the gelatin powder in water. Add the dissolved gelatin and brandy to the meat mixture and mix thoroughly.

    Form the Terrine

    Transfer the mixture into a terrine mold or a loaf pan, pressing down firmly. Cover with foil.

    Cook the Terrine

    Place the terrine mold in a water bath and bake in a preheated oven at 160°C (320°F) for about 1.5 hours or until the internal temperature reaches 70°C (160°F).

    Cool and Set

    Remove from the oven, let cool to room temperature, then refrigerate for at least 4 hours or overnight.

Apple Crostini Preparation

    Prepare the Crostini

    Preheat your oven to 180°C (350°F). Brush the baguette slices with olive oil and place them on a baking sheet. Bake for about 10 minutes or until golden and crispy.

    Add Apple Slices

    Top the crispy baguette slices with thinly sliced apples before serving.

Assembly

    Slice the chilled pork terrine and place a piece on each apple crostini. Serve with a dollop of Dijon mustard on the side.
