For the Financier

For the Dark Chocolate Glaze

Method

Preparing the Financier

  1. 1

    Preheat Oven

Preheat your oven to 375°F (190°C) and grease a financier pan or mini muffin tin.

  2. 2

    Melt Butter

In a small saucepan, melt the unsalted butter over medium heat until it turns golden brown. Remove from heat and let it cool.

  3. 3

    Mix Dry Ingredients

In a bowl, whisk together the almond flour, powdered sugar, all-purpose flour, and vanilla extract.

  4. 4

    Combine Mixtures

Add the egg whites to the dry ingredients and mix until just combined. Slowly pour in the browned butter, mixing gently until the batter is smooth.

  5. 5

    Bake

Spoon the batter into the prepared pan and bake for about 15-20 minutes or until golden and a toothpick inserted in the center comes out clean. Allow to cool completely.

Making the Dark Chocolate Glaze

  1. 6

    Heat Cream

In a small saucepan, heat the heavy cream until it just starts to simmer.

  2. 7

    Melt Chocolate

Remove from heat and add the dark chocolate. Let it sit for a minute, then stir until smooth and fully melted.

Assembling the Petit Four

  1. 8

    Glaze the Financier

Dip the cooled financiers into the dark chocolate glaze or spoon the glaze over them. Allow the excess to drip off.

  2. 9

    Add Fruit Topping

Top each glazed financier with a few fresh berries.

  3. 10

    Set and Serve

Let the chocolate set slightly before serving. Enjoy your delicious petit fours!
