    Prepare the Ingredients

    Clean the clams under running water to remove any sand. Finely chop the parsley and set aside.

    Cook the Guanciale

    In a large skillet, heat olive oil over medium heat. Add the guanciale and cook until crispy, about 5-7 minutes.

    Add Clams and Wine

    Add the cleaned clams and white wine to the skillet. Cover and cook until the clams open, about 5-10 minutes. Discard any that do not open.

    Cook the Linguine

    While the clams are cooking, bring a large pot of salted water to a boil. Cook the linguine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

    Combine and Serve

    Add the drained linguine to the skillet with clams. Toss everything together, adding reserved pasta water as needed. Stir in the arugula and parsley. Season with salt and black pepper to taste. Serve topped with pangrattato.
