Crust Preparation

    Prepare the Crust

    Preheat the oven to 350°F (175°C). Layer the phyllo pastry sheets in a greased 9-inch springform pan, brushing each layer with melted butter and sprinkling a little sugar in between. Bake for 10-12 minutes until golden brown.

Cheesecake Filling

    Make the Cheesecake Filling

    In a mixing bowl, beat the softened cream cheese and sugar until smooth. Add the melted white chocolate and vanilla extract, mixing until well combined. Add the eggs one at a time, beating well after each addition. Finally, fold in the heavy cream until smooth.

    Bake the Cheesecake

    Pour the cheesecake filling over the baked crust. Bake in the oven for 50-60 minutes or until the center is set. Turn off the oven and let the cheesecake cool inside for 1 hour, then refrigerate for at least 4 hours or overnight.

    Prepare Mulled Cranberries

    In a saucepan, combine cranberries, sugar, water, cinnamon stick, star anise, and orange zest. Bring to a boil, then reduce heat and simmer for 10-15 minutes until cranberries burst and mixture thickens. Remove from heat and let cool.

Assembly and Serving

    Assemble and Serve

    Once the cheesecake is chilled, remove it from the springform pan. Top with the mulled cranberries and garnish with fresh mint leaves before serving.
