    Prepare the Croutons

    Preheat your oven to 375°F (190°C). Cut the focaccia bread into bite-sized cubes. Toss the cubes with 1 tablespoon of olive oil and a pinch of salt. Spread them on a baking sheet and bake for 10-15 minutes, or until golden brown and crispy. Remove from the oven and let cool.

    Cook the Bacon

    In a skillet over medium heat, cook the double-smoked bacon until crispy. Remove from the skillet and place on a paper towel to drain excess fat. Once cooled, crumble into pieces.

    In a small bowl, whisk together the remaining olive oil, minced garlic, lemon juice, Dijon mustard, salt, and black pepper until well combined.

    In a large bowl, combine the chopped kale and romaine lettuce. Add the crumbled bacon and Parmesan cheese. Drizzle the dressing over the salad and toss to combine.
