Crispy Pork Belly

    Prepare the Pork Belly

    Score the skin of the pork belly in a crosshatch pattern. Rub the salt and black pepper into the meat, ensuring it gets into the scores. Drizzle with olive oil.

    Roast the Pork Belly

    Preheat the oven to 300°F (150°C). Place the pork belly on a roasting rack and roast for about 3 hours until tender. Increase the temperature to 450°F (230°C) for the last 30 minutes to crisp the skin.

    Cook the Relish

    In a pan, combine heritage squash, diced apple, chopped onion, apple cider vinegar, brown sugar, salt, and cinnamon. Cook over medium heat until the squash is tender and the mixture is thickened, about 20 minutes.

Mushroom XO

    Prepare the XO Sauce

    Soak dried mushrooms in hot water for 20 minutes, then chop. In a skillet, heat sesame oil and sauté fresh mushrooms, garlic, and ginger until soft. Add the soaked mushrooms, soy sauce, and cook until the mixture is fragrant.

Mustard Jus

    In a saucepan, bring chicken stock to a simmer. Whisk in mustard, butter, salt, and black pepper, cooking until slightly thickened.
