Prepare the Chicken
Preheat your grill or grill pan over medium-high heat. Season the chicken breasts with olive oil, salt, and pepper. Grill for 6-7 minutes on each side or until fully cooked and juices run clear. Once cooked, let it rest before slicing.

Prepare the Fries
While the chicken is grilling, wash and cut the Yukon gold potatoes into fries. Toss with olive oil, salt, and pepper. Spread on a baking sheet and bake in a preheated oven at 425°F (220°C) for 25-30 minutes or until golden brown and crispy.

Assemble the Panino
Slice the ciabatta bread in half. Spread pesto on both sides of the bread. Layer with sliced grilled chicken, fresh mozzarella, and sliced local tomatoes. Drizzle with aged balsamic vinegar.

Grill the Panino
Close the sandwich and grill it on the grill or in a panini press for 3-4 minutes until the bread is crispy and the cheese is melted.

Cut the panino in half and serve hot alongside the Yukon gold fries.
